My research focuses on all aspects of food, nutrition and health including antioxidants, food supplements, plant chemicals, polyphenols, phenolics, analytical chemistry, food processing, ultra-processed foods, food health claims, food chemistry, human clinical studies related to food and supplements, metabolic processes, digestion, physiological responses to food, protein structure, gene expression, omics techniques, obesity, type 2 diabetes, insulin resistance and biochemical pathways related to food consumption.
